From market to table

Sourced on the island

Villa chefs shop markets such as Pasar Badung in Denpasar for seafood, tropical fruit and spices; many villas source over 90% of their produce within a 50-kilometre radius.

Rice and produce from Bali’s UNESCO-listed Subak irrigation system feature prominently, and procurement teams can find imported wines, artisanal cheese or gluten-free flours on request.

  • Partnerships with sustainable farms and fisheries
  • Seasonal produce for daily menus

How to brief your villa chef

Preference sheets usually arrive on booking. Here is what to include.

  1. Give 72 hours’ notice

Send dietary requirements and menu preferences at least 72 hours before arrival.

  2. List every allergy

Name all allergies and intolerances so the kitchen can cook safely.

  3. Agree the budget

Discuss provisioning costs and chef fees upfront to match the villa’s pricing model.

  4. Set meal times and drinks

Share preferred meal times and drink choices; alcohol is often provisioned separately.

  5. Mention children and occasions

Note children’s favourite foods and portion sizes, plus any birthdays or anniversaries.

  6. Go local

Try Balinese ingredients and traditional dishes, and ask how produce is sourced if organic matters to you.

Beyond the menu

Cooking classes and private dining events

In-villa cooking classes of 3–4 hours, for up to six guests, teach Balinese classics such as Bebek Betutu and Bumbu Bali spice pastes. Private market tours can be added.

For celebrations, the team stages beach barbecues, poolside cocktail receptions or multi-course tasting menus with international wines, complete with tableware, lighting and service staff.
